The Winery

The Monolithos Winery is located at the entrance to the village of Pachna, one of the largest vine-growing villages in the Limassol district.

Pachna is surrounded by vines. Its cultural heritage is mirrored in the traditional stone houses and the various chapels and churches scattered throughout the village. In most houses, one can find large wine jars, grape crushers and wine presses, as well as stills for the production of the local alcoholic drink "zivania".

Monolithos Winery takes its name from two monolithic stones found one kilometer south of Pachna off the road leading to the villages of Prastio and Avdimou, which stand not far from the chapel of Ayios Stephanos. Nobody is sure about when these monoliths were made, but they appear to be pre-Christian.

Archaeologists believe that these large stones formed part of ancient grape presses, and that the rectangular holes in the middle of the stones housed the fulcrum of great levers. So for many years, the word "monolithos" has been linked with winemaking.

The Monolithos Winery is a small, family-run concern, committed to combining traditional techniques with the quality control benefits of modern technology. In producing these premium wines, only local grapes are used, which, thanks to Pachna"s excellent climate and high altitude (about 800 metres above sea level), are grown and matured on the vines in a near optimal environment.

Only by understanding what's going on in the vineyard, measuring several criteria and using careful skills and equipment such as clean, stainless steel vats, crushers, presses, fermentation tanks, pumps, temperature control equipment, etc. can a winemaker make and improve his wines, year after year.

Given the quality of the grape and the conditions of the vineyard, it is basically the skills of the winemaker, which determine the production of the finest wines. The know-how and ability to perform the primary tasks of selecting the grape varieties, ensuring proper care is taken of the vineyard, deciding when harvesting should begin, how grapes will be transported to the winery, when they will be crushed, pressed, processed, stabilized, filtered, aged and bottled - all these factors will determine the final quality of the wine.
